Sweet and Sour Chicken

(4-6 servings)

2 Chicken breasts boned and cut into 1/2 inch thick slices
1 tsp salt

Batter:
1/2 cup flour
1/4 cup cornstarch
1 tsp baking powder
1/2 tsp soda
3/4 cup cold water

Sweet and Sour Sauce:
3/4 cup water
2 tbsp cornstarch
2 tbsp rice vinegar
3 tbsp catsup
2/3 cup sugar

Garnish
1 tomato wedge
1 small green pepper, wedged
1/2 cup pineapple chunks
1 tsp toasted sesame seeds

3 cups oil for deep frying (375 degrees)

1. Heat oil in wok to 375 degrees.
2. Rub salt into chicken pieces. Dip into batter and deep fry in oil until golden brown. (about 4 minutes)
3. Bring sauce to boil stirring constantly.
4. Arrange tomato, pineapple, pepper on top of chicken, pour sauce over and sprinkle with sesame seeds.
